We’ve been working diligently to craft a uniquely American farmstead sheep’s milk cheese. It’s been a long process, and we have strict ideals for the sheep, goats, cheese, and farm. This isn’t about making the most cheese or necessarily even the cheeses that we get asked for most. It’s about choosing the recipes that will represent our animals and farm best. We want Lillooet farm and cheese to exemplify being worth the wait. We spent a lot of time looking for the right land, animals, community, and making sure the cheese room was just right. We believe that the fastest approach is never tantamount to quality. Our cheese will illuminate the betterment of the land and animals through the milk.
